This soup is a great way of using up sweet peppers that have been left in the fridge and are looking a bit sorry for themselves I sometimes chop up and freeze them if I am not going to use them for a while.
I used a bag of 5 medium sized red peppers that were reduced to 50p that were going out of date .
sriracha chili sauce is used here but use your favourite or chili powder or flakes
5 sweet red peppers
1 medium onion chopped
1 clove or garlic chopped
1 Tbsp of sriracha chili sauce
1 litre of chicken stock made from stock cube
1 tin of chopped tomatoes budget will do
1 Tbsp of olive oil
salt and pepper
Add oil to a large pan and fry onion peppers and garlic fry for 5 min add tomatoes and stock cover with lid and gently simmer for 30 minutes or till all is soft.
Remove from heat and blend with a stick blender season with salt and pepper.
