This is an easy quick to prep low cost and once in the oven it will look after it self for an hour the veg is cut up chunky and rustic placed in a baking tray a wire grill placed on top and the chicken pieces on the rack any chicken pieces will do I have used thighs here good value @ £ 1.89 a kilo from most supermarkets.
serves 3 good portions
1 Kg of chicken thighs
5 or 6 carrots chopped
5 or 6 parsnips chopped
4 small potatoes halved or quartered if larger
3 small onions quartered (the onions should be cut threw the root leaving the root in tacked so it doesn’t fall apart during cooking)
3 cloves of garlic crushed
1 Tsp of turmeric
1 Tbsp of olive oil
2 pinch of salt
1 pinch of pepper
Add everything into a large roasting tin and mix well with hands remove chicken and place on a wire rack then place the wire rack on to the roasting tin place in a pre heated oven at 180c for 1 hour.
The chicken juices will based the veg as they cook and only one roasting tin to clean up when done.
